The BEST Salsa Recipe

Three years ago when we were all quarantined, I made this and ate it every day! I had all my friends and family making it too! It’s the BEST! I never get tired of it and once the warm weather hits, I always have it in our fridge. I also store it in little jars and take to people to try! Everyone loves a little food gift, right?

You can make it all in the food processor and mix it up depending how spicy you like it, or how much you love cilantro! I love it a lot, others in our family not so much! Basically, take this recipe and make it your own!

Ingredients:

1 can Rotel tomatoes (or small diced tomatoes)

4 Roma tomatoes (cut in quarters)

1/4 red onion

2 cloves garlic

3 green onions (roughly chopped)

1 jalepeno (remove the seeds if you want it less spicy)

1/2 tsp chile powder (Add more to taste)

1/2 tsp cumin

Salt and pepper to taste (I often add more salt at the end.)

Juice and zest of 1 lime (in a pinch, I will also use a few drops of Lime Vitality Essential oil)

Bunch of cilantro (I use a whole bunch, but do what you like!)

Directions:

Roughly chop all ingredients and pulse in the food processor until combined until you get the texture you want. Then get out your chips and start tasting. This is where I add extra salt or chile powder if needed. Store in an airtight container or jar! We usually eat this within one week. Usually we just use it as a dip but it’s also good on eggs or whatever dish you use salsa on!
