Morning Glory Zucchini Muffins

Anyone else have lots of extra zucchini laying around this time of year? I love to walk to the farm up the street and grab an extra large zucchini to make muffins or bread. This week, I made a morning glory muffin. They aren't too sweet and are super nutritious! Keep reading to get the recipe!

Ingredients:

1/2 cup grated zucchini

1/2 cup grated carrot

2 cups multigrain flour

3/4 cup sugar

1 T cinnamon

2 tsp baking powder

1/2 tsp salt

1 tsp vanilla extract

3 eggs

2/3 cup olive oil

Mix ins: 1/4 cup each shredded coconut, walnuts, slivered almonds, ground flax seed

Parchment or muffin cups


Directions:

1) Preheat oven to 350.

2) Mix dry ingredients in a bowl and set aside.

3) Mix eggs, oil, and vanilla and add to dry ingredients.

4) Add your mix ins. I used what I had on hand, but any nut or seed work be great. You could also add raisins or mini chocolate chips!

5) Make your own muffin cups or spray before scooping.

6) Bake for 18-20 minutes until a toothpick inserted comes out clean.
