Grain Free Banana Granola
I have been making this grain free granola every week and it’s so yummy on a smoothie bowl, with yogurt, or just as a snack! I love that there are not sweeteners (just banana) and it’s just nuts and seeds! It clumps together nicely too…one of my must haves for a good granola.

Grain Free Banana Granola Recipe
Ingredients:
1 cup walnuts
1 cup pecans
1 cup slivered or sliced almonds
1 cup raw pumpkin seeds
1 cup unsweetened coconut
2 small bananas or 1 large banana
1/4 cup almond butter (or other nut butter)
2 T melted coconut oil
1 T cinnamon
Directions:
1) Add all the nuts to a large bowel. It’s 5 cups of nuts, seeds, and coconut. You can change this up depending what you have on hand. I also like to add 1 T of ground flax seed if I have it. Set this aside.
2) In a blender or food processor, add your bananas, almond butter, coconut oil and cinnamon. Other ideas: add clove, pumpkin pie spice, or vanilla. Blend until smooth.
3) Pour over nut mixture and stir until combined.
4) Lay out flat on a parchment covered baking sheet. Bake at 400 for 20-30 minutes until it’s brown. It will be toasty and clumped together. If you want it to be less clumped, just break it up after you take it out of the oven.
5) Store in an airtight container in the fridge.
Note: There are so many ways to make this recipe. I make it different every time depending that I have in the pantry! Get creative!!
